2 oz Gin of Choice
2 Sage Leaves
1 Fresh Bay Leaf
3 Fennel Fronds
1 Grapefruit Peel
1 Lemon Twist
Tonic of Choice


  • Step 1: Chill glass.
  • Step 2: Roll in ice sphere.
  • Step 3: Add fennel fronds, bay leaves and sage leaf.
  • Step 4: Zest grapefruit peel, rub around glass rim and insert.
  • Step 5: Zest lemon twist over contents and toss in.
  • Step 6: Pour in desired gin.
  • Step 7: Insert bar spoon into glass.
  • Step 8: Stream tonic down spiral of spoon to preserve bubbles.
  • Step 9: Serve.
